The sharp edge of this knife is made by experienced craftsmen and polished to a mirror finish at an angle of 12-15°. The handle construction is Full Tang, or reinforced with 2 steel rivets for additional stability. The knife is able to cut precisely without crushing or tearing the structure of the ingredients.
